The unique value and beneficial effects of Greek honey on the human body were proven by research by experts at the Aristotle University of Thessaloniki.

To carry out this research, 48 different honey samples were collected from all over Greece and from all flower types, and it was proven that their composition has much better properties, even than the much-advertised honeys from abroad, such as manuka!

The research examined types of Greek honey from oak, pine, fir, chestnut, orange, thyme, etc. and there was something special about all of them, which, according to University Professor Chrysoula Tananaki, had great antioxidant activity and could, with incredible effectiveness, combat free radicals and cell degeneration, i.e. the causes that cause cancer.

Also, these antioxidant properties give the human body the ability to shield itself with defense mechanisms, suitable for all diseases.
Glucose and fructose are found in honey in their simplest form. They are very easily digestible for the body and may have nothing to do with sugar, which, according to many scientists, destroys organs and their proper functioning. When honey enters the body, it is recognized by it as a “biological product” and the absorption of glucose into the blood occurs in moderation (the body takes as much as it needs) and not uncontrollably, as is the case with sugar.

These data prove the invaluable value of Greek honey, which, according to scientists, should definitely be consumed twice a day. Some scientists consider the (bitter) honey of the kumari tree, which has the lowest sugar content, ideal for diabetics.

Another impressive finding is that honey is one of the few natural products today that has not been affected by human evolution and mainly by the negative impacts of industrial activity on Nature, pesticides, etc. And this is because the bee has its way of collecting pollen only from "clean" flowers, and producing honey from it, wherever it is!

The result was unexpected. The much-advertised manuka honey did not have such antioxidant activity as Greek honey. Specifically, the research showed that the honey with the greatest antioxidant activity was found to be Greek oak honey, followed by honey from fir, heather, chestnut, pine, thyme and orange trees.
As experts emphasize, Greek honey, which is produced nowhere else in the world, is another wealth-producing element for Greece, which we should highlight worldwide.

Types of honey:

Thyme: Crystallizes in 6-18 months.
Orange: It crystallizes in 1-2 months and turns whitish.
Sunflower: Crystallizes in 1-2 months and turns yellowish.
Heather (sousourisio): Crystallizes in 1-2 months and becomes reddish.
Chestnut: Mixture of honeydew and nectar. Slightly bitter, has a strong aroma. Crystallizes in 1.5-2 years.
Cotton: It crystallizes quickly in 1-2 months and turns whitish.
Polycomb: Dark in color. Its taste is not pleasant. It is suitable for mixing with other honeys.
Acacia: Crystallizes slowly, after about a year.
Pine honey: 65% of the total production in Greece. It is not particularly sweet, which is why it is liked (it has a low sugar concentration). It does not crystallize and has fewer calories.
Fir: One of the best honeys. It remains liquid.
