Black-eyed beans combine two very important properties:

Black-eyed bean salad recipe
Ingredients:
275 g black-eyed beans ALL ORGANIC
5 spring onions, thinly sliced
1 bunch of arugula, chopped
3-4 tbsp chopped dill
2/3 cup extra virgin olive oil
juice of 1 lemon
10-12 black olives
salt & pepper

Instructions:
Wash and drain the beans.
1. In a pot, put the beans and enough cold water to cover them.
2. Put them on the fire and once they boil, leave them for 10 minutes and strain the water.
3. Put them back in the pot, with fresh water just enough to cover them and salt, so they harden and don't melt when boiling.
4. When they come to a boil, lower the heat and cook until they are soft, but not too soft (about 20-30 minutes).
5. Strain the beans, reserving 5-6 tablespoons of their broth.
6. Place them in a large salad bowl along with the remaining ingredients and the reserved broth and mix well.
Serve immediately, or after they have cooled slightly.
