Buckwheat, or "black wheat", is a seed of a shrub and is classified as a cereal. We know it at the end of the 14th century, its roots are in the East and it is particularly widespread in China, Japan, Eastern Europe, where it is consumed as a seed, flour, flakes or as pop (for breakfast). As a "cereal" it is different from the rest, with excellent nutritional value and a much higher protein content (14%). It contains all the essential amino acids, many vitamins - mainly of the B complex - that are usually found in animal foods, while it is rich in fat-soluble vitamins E and K. It also contains folic acid, several minerals such as calcium, iron, copper, manganese, magnesium, potassium, selenium, and zinc.

Popped buckwheat does not contain additives or gluten, so it can be used by people who have an intolerance to it (celiac disease). It also contains a lot of fiber and complex carbohydrates, so it can be freely used by people with diabetes, since it stabilizes blood sugar levels.
