APPLICATIONS:
It comes from North India and the word masala means a mixture of spices while the word garam means "hot" but with the Ayurvedic approach to the term. It is not hot but aromatic and spicy.
It goes well with lamb, goat, pork, chicken and vegetables with eggplant or potatoes. It can add wonderful flavor to hot drinks.

DOSAGE/INSTRUCTIONS:
It depends on the recipe and the cook's preference. In India, they add it to the food towards the end of cooking, so that it doesn't lose its aroma. There, of course, they also prepare the mixture on the spot.
A typical dosage is 1 ½ tablespoons of Garam Masala spice mix per kilogram of meat.
