There are two types of heather honey, each with different properties. Thus, we have autumn heather honey and spring heather honey. Spring and autumn heather (or sousoura) are among the most important beekeeping plants in Greece. It is produced almost throughout the country.

Autumn heather honey
Taste: It is tastier than that of spring heather and is distinguished by its strong flavor.
Aroma: Characteristic, delicate aroma.
Color: Reddish.
Crystallization: Due to its high natural glucose content, it crystallizes very quickly (approximately within 1-3 months) and is therefore not suitable for mixing with other honeys and for creating commercial types (blends). This honey also sours more easily than other types of honey, because it has high humidity and a high content of saccharomyces.
Nutritional value: Heather honey (especially autumn honey) is considered a very nutritious type of honey and particularly tonic for the human body, which is why it is sold mainly in health food stores.
