WILD RICE ... the king of rice

Rice rich in fiber with a low glycemic index
It is a special rice, produced in North America, and is classified as a food with ideal results during a diet period due to its low caloric value.

Black rice is a "superfood"
Underrated in the West but adored in China, black (or wild) rice may be a “miracle” food, American scientists reveal. In a study they conducted, they found that it contains a large amount of certain nutrients that fight heart disease and cancer.

Scientists from Louisiana State University analyzed samples of bran from black rice grown in the southern states of the US, detecting particularly elevated levels of anthocyanins.

Anthocyanins are powerful antioxidant compounds that give certain fruits and vegetables, such as berries and red peppers, their vibrant colors, and are also what give black rice its characteristic color.

As the Daily Mail writes, it is well documented that anthocyanins help protect arteries and prevent DNA damage that leads to cancer, because they bind free oxygen radicals – a group of highly reactive molecules.

According to researcher Jimin Hu, a tablespoon of black rice bran contains more anthocyanins than a tablespoon of berries, which are considered one of the best sources of them. In addition, black rice contains less sugar and more fiber and vitamin E.

Recipe for wild rice with cashews

MATERIALS

2 cups mixed wild rice ALL BIO
125 g organic margarine
1 onion, chopped
1 organic vegetable cube
1 carrot, thinly sliced
a little chopped dill
5-6 fresh mushrooms, sliced
HIMALAYAN salt
1/2 cup ALL ORGANIC cashews
4.5 cups water

RECIPE
We wash the rice.
Melt the margarine in a saucepan and add the onion, carrot, mushrooms and dill.
Once they are sautéed, add the rice, water and vegetable cube.
Boil for 20-25 minutes, add salt if needed. Serve sprinkled with grated cashews (not before or it will soften)
