Bukovo comes from the well-known red pepper of the genus Capsicum annum, usually a hot variety but also sweet. The fruits are dried and then rubbed to give the well-known bukovo, which is the chopped flesh of the pepper along with its seeds.
Culinary Use:
It is used in sauerkraut, and is recommended for tripe and in general for soups, boiled and roasted. Ideal in bean soup, in sauces, it is also added to yellow cheeses for a spicier flavor.
