Harvest areas: northern Evia, Halkidiki.
Approximately 65% of the total honey production in Greece comes from pine trees. The pine tree is considered the most important beekeeping plant in our country. The main areas of pine honey production are northern Evia, Halkidiki, Thassos, Crete, Skopelos, Rhodes and from Parnitha in Attica.
Taste: Due to the low sugar concentration, it is not too sweet.
Aroma: Distinctive. Some liken it to the aroma of iodine.
Color: Pine honey is darker than thyme honey. In fact, that produced in the spring is lighter and clearer than that produced in the fall.
Crystallization: Pine honey sugars relatively slowly, since its natural glucose content is low. Specifically, pure pine honey remains liquid, that is, without crystallizing, for more than a year and a half.
Nutritional value: Pine honey is considered a honey of high nutritional value and this is mainly due to the large number of different substances present in its composition. Of these substances, the predominant ones are metals and trace elements (calcium, magnesium, zinc, iron, copper, etc.), which are found in high concentrations in Greek pine honey.
