ORGANIC RED QUINOA
Specifically, quinoa contains iron, B vitamins, magnesium, phosphorus, potassium, calcium, vitamin E and fiber .
It is one of the few plant foods with a high protein content , and contains all the important amino acids.
It is also full of healthy fats, in the form of oleic acid , a "good" monounsaturated fat, and alpha-linolenic acid, the Omega-3 found in most plants.

A serving of quinoa contains 160 calories, 2.5 grams of fat (none of which is saturated or trans), no cholesterol or sodium, 6 grams of protein, and 27 grams of carbohydrates (of which 3 grams are fiber).

How do we cook it?

It is used like rice & couscous.
First soak in hot water for 5 minutes and then rinse thoroughly under running water. Rinsing is necessary because the quinoa skin contains a bitter ingredient. Due to saponins, it is not recommended as food for young children .
Boil in twice the amount of water over low heat for about 15 minutes .
Once the food comes to a boil, add salt, and lower the heat. Be careful not to let it stick because it needs stirring every now and then. Once it is ready, remove it from the heat and let it cool slightly with the lid closed.

Red Quinoa is preferred over white in salads, stuffed vegetables or risotto because it does not soften as much as white to the point of losing its shape and becoming mushy.
