Black garlic comes from the "Fermentation" of white garlic (enzymatic browning) which gives it its black color. It has a sweet and pleasantly smoky flavor.

Its strong odor and pungent taste have disappeared during the browning process.

The beneficial properties of garlic as an edible product and as a dietary supplement have been known for many years. Black garlic is certainly not unknown in Greece. Historical sources have confirmed that the ancient Greeks consumed black garlic before battle , especially the Spartans.

It has a strong antimicrobial effect , contains the substance allicin that causes dilation of the arteries and has a strong antioxidant capacity.
