It is considered to be a honey of excellent quality . It belongs to the category of honeys of noble aromatic plants (Thyme, Thyme, Tea, sage, oregano, mint, etc.). In reality, however, it is a separate category of honey of its own, due to its intense aromatic and taste characteristics. Its appearance is particularly attractive, which is why consumers usually prefer it. Its production amounts to approximately 10% of the total honey production of Greece. The best areas for the production of thyme honey are considered to be the Greek islands, especially Crete and Kythira, Lefkada, Kefallonia, Galaxidi.
Taste: Thyme honey has a pleasant taste, but sometimes, due to its high fructose concentration, it leaves a burning sensation in the mouth.
Aroma: Intensely aromatic honey.
Color: Usually light amber. (Thyme honey from Attica and the Cyclades is lighter than thyme honey from Crete, which is dark orange.)
Crystallization: This particular type of honey sugars over a period of 6-18 months.
Nutritional value: Thyme honey is considered to have tonic and antiseptic properties.
