What is raw cocoa?
Raw cacao refers to the raw form of chocolate/cocoa that has undergone no or minimal processing, is unsweetened, and is made from unroasted cacao beans. Raw cacao products (from unroasted cacao beans) retain much more of their natural nutrients and antioxidants compared to regular, roasted cacao.
What is the criollo variety?
The criollo variety of cocoa is considered an exceptional cocoa variety - the king of cocoa with the best flavor and aroma . Creole cocoa is an ancient non-hybrid variety, rare and expensive, famous for its complex flavor and aroma. Only a small part of the world's production comes from creole trees.
